Ricotta Hot Cakes with Honey

Who said I cannot have dessert as main dish? Of course I can! My craving for sweets started around 3pm this afternoon and it was to a point that I need to get myself a can of classic coke to satisfy my sudden craving. I am sure many of you have experienced sudden cravings for certain food, mine just seem to be more often than most people perhaps. So what's for dinner??? Hot cakes!!! ... The recipe was adopted from Bill Granger from Bill's Food.



Recipe (serves 1 - 2)
  • 3/4 cup of Ricotta cheese
  • 1/2 cup of milk
  • 2 eggs separated
  • 1/ 2 cup plain flour
  • 1/2 tablespoon of baking soda
  • salt
  • 20g of butter
  • honey
  • kiwi or whatever fruits you like
Step 1 - separate the two eggs (egg yolks and white)



Step 2 - whisk the egg white until some foam is formed. Set Aside.



Step 3 - Mix ricotta, milk and egg yolk together.



Step 4 - Add in the flour, baking power and some salt.



Step 5 - Add in the foamed egg white and mix well.



The mixture should tun thick and slightly gluey. Set aside and heat up the pan.



Step 6 - Grease the pan with some butter and slowly transfer sufficient amount of batter to pan for cooking. Ensure you add in the batter slow so to let it slowly expand on its side to form a circle. You can form a square if you like, does not really matter.



Flip when the undersides turns gold. (around 3 -4 mins perhaps, really depends) Try not to make it too thick other wise it would take a long while to cook. The first batch of the hot cakes might not be as thick or as fluffy as expected, so do try the first batch and adjust the cooking time receptively.



Step 7 - Serve and top with sugar icing and whatever fruits you want. Enjoy the DINNER! :)

Separate 2 eggs, whisk egg white to foam and mix 3/4 c of Ricotta, 1/2 c milk, 1 c flour, 1 tsp baking power & salt. Slowly cook hotcakes in several batches by slowly pour into pan for 4 mins or until under undersides turn gold. Serve with fruits, sugar icing and honey. [characters: 269]

i love pancakes! please make mine with bananas, mangoes, sliced almonds, chopped walnuts, whipped cream, and nutella! :)
