Crazy? I denied it! It is through a bit of craziness that inspired new creations. This post is 100% inspired by @mochachocolata's idea. I forgot how the topic came about but somehow we talked about the many cupcakes around town, all of them are sweet as they should be; but why can't we have char siu (BBQ Pork) cupcakes which are non-sweet? Do we still call it cupcakes then? We don't know but we like to call it Char Siu Cupcakes anyhow. The modified yoghurt-based char siu cupcakes recipe is adopted from vanilla cupcakes from Joy of Baking which is now my other source of inspiration when it comes to baking.
Recipe:
- 1/2 cup of unsalted butter (approx 115g)
- 2/3 cup of sugar
- 3 large eggs
- 1 1/2 cup of flour
- 1/2 teaspoon of salt
- 1 1/2 teaspoon of baking powder
- 1/4 cup of plain yoghurt (approx 60ml)
- 2 teaspoon of honey
- 1/2 kg of char siu / BBQ pork (or more if you like)
Step 2 - Mix butter and sugar together. Whisk until fluffy texture shows.
Step 3 - Add one egg at a time and mix thoroughly before adding another egg.
The batter should look something like the following and set aside.
Step 4 - mix the flour, baking powder and salt in another bowl. Preheat oven at 177C.
Step 5 - fold in the flour into the wet mixture together with the yoghurt in 3 additions when mixing / folding.
Step 6 - mix in the diced char siu / BBQ pork into the batter
Step 7 - fill muffins tray with batter and top with thinly sliced char siu / BBQ pork (in my case, thicker because I prefer to have the texture to it)
Step 8 - Baked for 20 minutes at 177 C and you have the yummy char siu cupcakes!
I like my char siu / BBQ Pork cupcakes!!! :)

In my world, cupcakes are only sweet, but what about if they were renamed char shui/ bbq pork muffins as they're sort of savoury? But they again, as they were/ are your concoction, you ought to be allowed to call them whatever you want.
Nice! I thought these were store bought from Hong Kong! Yes...cha siu is the HK version of good western bacon. We've been doing honey/maple bacon with molasses cha siu for years :-D. When is cha siu flavored frozen yogurt (froyo) going to be next??
Crazy but good idea! I'm sure New Yorkers would eat that up! Maybe a char siu, bacon, or pork belly version a la momofuku? Gotta try out your recipe!

@cheeky angel: someone told me there are Chocolate & Bacon cupcakes topped with mash potatoes in the States. I was like ... what??? but after a quick search there are plenty similar offerings. I wonder how they will taste haha ...

this is brilliant, jason! i'm sure it tasted awesome. this should be a staple in all hk bakeries! btw, i LOVE joy of baking! isn't she the coolest?
