Classified (Hong Kong)

I love cheese and that's not a secret for those who frequent my blog. I would like to take this opportunity to extend my thanks to Geoff (the man behind Geoff's Twitchen) for inviting me to this Mont d'Or event / gathering at the Classified, an event he single handedly organized. I had a cheesy yet amazing night at Classified (Wan Chai) but there was one thing really disappointed me: I thought we could have one carton of Mont d'Or for each one of us! :) ... Where was I with cheese again? Oh right, I love cheese and Mont d'Or can be considered a beginner's cheese. It is a seasonal soft cheese made from cow's milk. If you are not a fan of cheese at this moment, give Mont d'Or a try and eat with a spoon while watching TV. I am very serious about it! Let the cheese rest under room temperature inside the round wooden box and dig in when it becomes slightly running and creamy!!!!

Before the arrival of our cheese, Wendy, the wine and cheese specialist gave us a brief introduction to the Mont d'Or we were having as well as the wines she prepared for us to pair with the two different style of cheese servings. I am no wine expert so I will simple list out the two wines we had: (1) Walter Hansel Chardonnay, Sonoma County, USA (2007) & (2) Domaine Schlumberger, Grand Cru from Alsace France (2006).

The event started off with baguette and spoonful of Mont d'Or! Simple as that and wonderful the way it was! Rich and creamy to a point that I almost blacked out from the pleasure of it!

After the original Mont d'Or servings, our came a baked / melted version with roasted sweet potatoes and diced bread for dipping like a fondue ! Now that was smart and something new to me, at least the way how they did it by simply putting the whole wooden box into the oven!

Its aroma was stronger, the flavors were more intense and it was fun to eat like a cheese fondue! Almost forgot, the roasted sweet potatoes went really surprisingly well with the cheese and they were gone very quickly!

This reminds me that I have a brie waiting to be baked at home. :) We're thinking of having a raclette party for the holidays - don't you wish to be back just for the night?

my favourite spot to have cheese in HK! we have a variation called "cheese and wine in Beijing", while the cheeses are fantastic imports from France, it's only limited to French cheeses, abit of a shame.
